The answer is yes, I have used both shredded coconut and coconut milk in peach cobbler. The shredded variety of coconut tastes amazing mixed into your peach cobbler filling or crust. You can even sprinkle the shredded coconut on top of the cobbler as a topping. With regard to coconut milk, I have mixed this into both the cobbler filling and crust, and the finished dessert was absolutely delicious.
