When I am baking a peach cobbler, I generally use one to three tablespoons of fresh squeezed lemon juice in a six to ten serving size peach cobbler. If however you want a very bold lemon tart flavor, then you can add anywhere from one eighth to a quarter cup of lemon juice for the serving size I just mentioned. It is however always important to remember that there are many flavors within a peach cobbler that you want to stand out, and so I generally avoid adding too much of anything, as it has a tendency to drown out other more subtle flavor notes, such as nutmeg, vanilla, or fresh egg.
