I have found that one cup of sugar split between the peach filling and the crust works well with a six serving and up dessert dish. If your peach cobbler serves under six people, then you might consider using less than one cup of sugar, as you don't want the sweet sugary syrup to over power all the other delicious flavors contained within the cobbler. When it comes to an eight serving cobbler, I will use about a cup and a half of sugar. However aside from my recommendations, the best way to answer this question, is to simply bake a peach cobbler using one cup, and then if you find the sugar volume should be regulated, then obviously you can make any needed adjustments in your second batch. I go so far as to take notes with new dessert dishes that I'm baking, so I know what adjustments to make during the second round.
