The superfine variety is still granulated, however the granulates are extremely small. I personally find that superfine sugar is the most ideal for baking desserts with, because it melts quickly, and it is also very easy to blend with other ingredients such as flour. Almost every modern grocery store stocks the product, so if you have never used it, then I recommend you give it a try. Regular granulated sugar will still work well with peach cobbler if you are unable to purchase the superfine variety, however you'll notice it doesn't sift well with other powdered ingredients, and can even cause clumping in your dough, which obviously can ruin any dessert dish.
